Junior Culinary Institute

(For students who've completed 5th grade through 8th grade)

Junior Culinary Institute: A week-long, full-day program that educates students in grades 5-8 in food safety, food preparation and the culinary arts. Participants use Manchester Community College and Greath Path Academy's state-of-the-art culinary labs to strengthen their skills in the culinary arts.

Junior Culinary Institute I: Intro to the Culinary Arts

In this fun, hands-on, experience-based course, students will explore and strengthen their culinary skills. Under the guidance of experienced and professionally trained chef and certified culinary arts teacher, Chef Josh, students will cook multiple diverse dishes each day and celebrate their combined skills by treating their families to a buffet on Friday. While cooking independently and in small groups, students will learn and practice baking, sautéing, frying, whisking, folding and stirring, and knife skills, just to name a few. Chef Josh will explain kitchen safety and sanitation, menu development, principles of hospitality, plating, garnishing and more. Students of all culinary skill levels are accepted, but students must be able to follow directions and be safe in the kitchen. Tuition includes materials fee. Students must wear slip resistant shoes and provide their own paring knife.

Junior Culinary Institute II: Advanced Study

Take your culinary skills to the next level! In this advanced class, we will be visiting several continents and learning about advanced and indigenous cooking methods from around the world. We will start our tour in Europe and move to Asia, then Africa, concluding our culinary cruise in North America. On our final day, we will treat our families to an international feast, dazzling them with the skills we have learned! Students do not need to pack a lunch for this course; they will be preparing their own each day. Prerequisite: Junior Culinary Camp or Junior Culinary Institute I.

  • Grades: 5-8 (Youngest students must be completing 5th grade in the 2014-2015 school year.)
  • Prerequisites: Junior Culinary Camp (with Chef Rachael) or Junior Culinary Institute I
  • Dates and Times: July 20-24, 2015 | One-week | Monday-Friday | 9:00 a.m.-4:00 p.m.

More about Chef Josh

Joshua Ogrodowski is currently a CT certified Culinary Arts Teacher/Serv Safe Instructor and teaches grades 9-12 at Enfield High School. He earned an associate's degree in culinary arts, a bachelor’s degree in culinary nutrition and a master's of arts in teaching in foodservice education from Johnson & Wales University. During that time he worked as a teaching assistant and fellow for the college, working procurement and events. He also completed his student teaching at Diman Regional Vocational High School in Fall River, MA, where Emeril Lagasse graduated. Prior to teaching, he worked for 12 years in various foodservice establishments from restaurants to country clubs, working up to a supervisory position.
